BANANA CHOCOLATE BITES

Ingredients:

• 1 cup applesauce

1 cup almond meal

3 tablespoon coconut flour

3 tablespoon psyllium husks

2 tablespoon green banana flour

3 tablespoon melted butter

1 teaspoon cinnamon

1/2 teasoon baking soda

1 egg

2 teasoon vanilla extract

1/4 teasoon liquid stevia

2 tablespoon milk (cow, goat…)

1/2 cup chopped pecans (up to 1 cup if you want)

1 bar dark chocolate chopped (I use 85%)

Directions:

1. Preheat oven to 350 F.

2. Put everything in a bowl and mix.

3. Grease a cookie sheet, or line it with parchment paper.

4. With a teaspoon put little heaps of dough onto the cookie sheet. I do not shape them, I like them like muffin tops. Or, you could also use a mini muffin pan, if you prefer that.

5. Bake for about 25 minutes (can vary depending on your oven).

TAPIOCA ROLLS

Being from Germany, we really love our breads and rolls. These rolls, because of the psyllium husk, have very a nice consistency. They are great fresh, but you can also toast them if you want to enjoy them a couple of days later.

Ingredients:

1 1/2 cup Tapioca flour

1/2 cup Psyllium husks

1 tbsp. Coconut flour

1/2 tsp. Salt

1/2 tsp. Baking soda

Mix dry ingredients with spatula

1 Egg

1/4 cup Olive oil

2/3 cup Milk

Directions:

1. Mix everything by hand or with mixer. If the dough is too firm add more milk (little by little).

2. Form rolls on baking sheet by hand.

3. Bake at 400 F for about 20 minutes.
